Zucchini Fritters

 

You want to start the day on the right foot ? Try this recipe. These fritters will wake up not only your taste buds but your whole body. We used quinoa flour (blend quinoa to a flour consistancy) in this reciepe. Our aim was to provide a healthy intake in the morning to get your metabolism going! Note that you can prepare the fritters batter in advance (the evening before) so that only the cooking remains when ready to enjoy this treat.

The ingredients are given for 4 medium servings.

 

INGREDIENTS
 
  • 3/4 cup of quinoa flour

  • 3/4 tsp of baking powder

  • 2 eggs beaten

  • 1/4 cup of 2% fat milk

  • 1 1/2 zucchini grated

  • 2 tbsp of fresh thyme

  • 1 tbsp of avocado oil

  • Salt

  • Pepper

DIRECTIONS

 

  1. If you do not have quinoa flour and only quinoa, blend 1/2 cup of quinoa until you obtain your 3/4 cup of quinoa flour.

  2. In a bowl, mix the quinoa flour and baking powder. Add the eggs and mix the everything until it's homogeneous.

  3. Slowly add the milk to the mixture in order to keep/ obtain an homogeneous batter.

  4. Wash the zucchini and grate it over paper towel so that excess juice gets absorbed.

  5. Add the zucchini, thyme, sald and pepper to the batter and mix thoroughly until all ingredients are well integrated.

  6. Heat the oil (we used Avocado oil) in a large pan (heavy preferrably so that it has enough heat inertia) using medium intensity fire.  Put one tablespoon of the batter in the pan to make a medium-sized fritter. For each of these fritters, cook them for 3-4 minutes on each side until golden.

  7. Once cooked properly, put the fritters inside a dish lined with paper towel and put aside in the oven at very low temperature (to keep the fritters warm and crispy). Enjoy !
