DIRECTIONS

 

  1. Wash and chop the kale into small bite size pieces. Along the way, remove the stems and the veins to only keep the green parts of the kale. Peel and chop 1 white onion. Drain and rinse 1 tin of cannellini or white beans.

  2. In a medium saucepan, heat 1 tablespoon of olive oil and add the chopped white onions. Cook and stir until softened and translucid. 

  3. Add the water and your magi stock cubes, and bring to a boil.

  4. Add the kale and the white beans. Add salt, and black pepper to your taste. Partially cover and reduce heat to simmer until kale is tender, for about 10-15 minutes. 

  5. Pour into a bowl and enjoy this light warm soup.
