Vegi Noodle Medley

 

Our Vegi Noodle Medley is a vegan interpretation of a classic loved by all : spaghetti and meatballs. For the noodles, we used a combination of zucchini and sweet peppers as these two vegetables work very well together. For the balls, Cavita fell in love with these kale & quinoa bites: an awesome discovery from our Sobeys vegan section.

 

Experiment with what is available at your closest joint. Combine all these healthy and fresh ingredients with some awesome fresh herbs and seasoning and you will obtain a medley of flavors and colours truly delightful !

The ingredients are given for 4 medium servings.

Kale & Quinoa bites, white onions, ginger, thyme, cilantro, garlic
Zucchini, vegatable
Red & orange sweet peppers, vegetables
INGREDIENTS

 

  • 3 small zucchini

  • 2 sweet peppers (color of your choice)

  • 1 cup of white onions

  • 3 cloves of garlic

  • 1 knob of ginger

  • 1 chili pepper

  • 1 tbsp of cilantro

  • 1 tbsp of thyme

  • 1 Maggi vegetable cube

  • 1 pack of Kale and Quinoa Balls

  • Salt and black pepper

  • Olive oil

DIRECTIONS

  • Finely chop the white onions, grate the garlic cloves and the ginger and set each aside.

  • Finely chop your chili pepper. Remember the membrane and seeds bring heat so remove those for a milder impact if wished.

  • Finely chop the cilantro and remove the leaves of thyme from the stem.

  • Wash, dry and spiralize your zucchini and sweet peppers. Set each aside.

  • In a medium hot pot, add 2 tablespoons of olive oil.

  • Sauté the finely chopped onions until translucent, then add the grated garlic, ginger and chili pepper.

  • Stir together until fragrant and add the spiralized zucchini and sweet peppers. Toss with the thyme and cilantro. Cook for 3-5 minutes or until the vegetables are tender but not too soft.

  • Add salt and black pepper to taste.

  • Serve with some kale and quinoa balls and enjoy this light refreshing dish.
