Vegan Pilaf

 

Pilaf is a dish in which rice is cooked with a seasoned broth. This Vegan Pilaf is another variation of the pilaf concept and presents the advantages of being a one pot one dish along with replacing some of the rice by split peas, trading some carbs by some more proteins.

 

This dish was a fantastic treat made by Cavita for Antoine as it gathered so many flavours of the Caribbean gastronomy while having a consistency very close to the creamy,soft and beloved risotto. This was a first and it is already planned that there will be a second, a third, a fourth... in Lean Lifestyle kitchen! We used Kale and pumpkin for some added veg in this one pot dish that's packed with protine and fiber from the split peas.

The ingredients are given for 4 medium servings.

 

INGREDIENTS

 

  • 1 cup of brown rice

  • 1 cup of orange split peas

  • 1 cup of pumpkin, diced

  • 1 cup white onions, chopped

  • 1 cup of coconut milk

  • 1 cup of kale, chopped

  • 1 Maggi vegi cube

  • 3 cloves of garlic

  • 1 knob of ginger

  • Cilantro (to taste)

  • Salt

  • Black pepper

  • Olive oil

  • Red clili flakes (optional)

  • 1 tbsp of Cumin seeds (optional)

DIRECTIONS

  • Finely chop the onion, grate the garlic and ginger and set aside.

  • Wash, peel and chop in cubes the butternut squash or pumpkin.

  • Tear the kale off the stem and chop in bite size pieces.

  • In a large pot heat 2 tablespoons of olive oil and sauté the onions until translucent then add the garlic and ginger and stir until fragrant.

  • Add one cup of brown rice and mix well with for another minute or two then add the magi vegi cube, coconut milk, salt and black pepper. Cook for 15 minutes on medium heat.

  • Add 1 cup of orange split peas (yellow split peas takes longer to cook. If you are using the yellow split peas I recommend putting it in together with the rice in the step above) and 2 cups of water with some cumin seeds (optional). Cook for another 15 minutes.

  • Add the kale, mix well and cook for 2-3 minutes until kale is wilted. Taste for any additional black pepper and salt.

  • Your dish is finished when the rice, split peas and pumpkins are soft and sticky.

  • Serve hot with cilantro and sprinkle red chili flakes for that extra spicy kick.
