Vegan Onion Tart

"Pissaladière" or Onion Tart is a traditional recipe from the South-East of France. It is coming from an area bordering the Mediterranean sea, where seafood is abundent and olive trees are everwhere. This is also a recipe that Antoine's grandmother introduced to his family several years ago making it one of the favourite dish of the family. We are now sharing this recipe with you !

The French Onion Tart included onions... and black olives and anchovies. However, we have decided to tweak this recipe and make it vegan so that all of you can actually prepare it and enjoy it. This Vegan Onion Tart is very good warm and even better cold. It is either a good starter dish (with a salad) or a nice snack (by itself, cut in small portions). In any situation, you will melt for this combination of onions softness and bread crispiness ! Approved by all those that have tried it to this day.

The ingredients are given for 4 medium servings.

 

INGREDIENTS

Dough making

​

  • 200g of all-purpose flour (or bread flour)

  • 1 pinch of salt

  • 2 tbsp of softened butter

  • 8g of dry yeast

  • Water

Tart stuffing

  • 7 yellow onions, sliced

  • 2 garlic cloves, finely chopped

  • Black olives (optional)

  • 1 tbsp of olive oil

  • Salt

  • Pepper

 
DIRECTIONS

 

Dough making

  1. Start preparing it 6 hours in advance at least or else use a frozen bread dough or buy it from your baker.

  2. Mix the all-purpose flour (or bread flour), the salt and the butter until homogeneous inside a big bowl.

  3. Add on top of the mix the yeast and start by putting in 1/3 cup of water. Mix the whole using a fork or a stand mixer. While mixing, add water in the mix until the mix takes the shape of a dough and aggregates all the flour (it should be sticky).
  4. On a floored surface, put the dough ball. Flour your hands and start kneading the dough. After 10 to 15 minutes of kneading put the dough back in the bowl, film it and let it rest outside (20°c being the target temperature for it to correctly rise).

 

Vegan onion tart preparation

  1. Pre-heat your oven at 410°F.

  2. Peel and slice all the onions. Peel and chop finely all the garlic cloves.

  3. In a big sauce pan (or dutch oven), warm 1 table spoon of olive oil. Add in the onions and the garlic when the oil is hot. Cook the vegetables for 15 to 20 minutes on medium fire without covering the pot so that all the water can evaporate and the vegetables start caramelizing. Add some salt and pepper to your taste.

  4. Remove the gaz inside the dough by punching it. Spread the dough and put it in a big pie pan (30cm or more) whose bottom you will have floured in advance.

  5. Add on top of the dough the onions and garlics. If you want to get closer to the original dish, you can add black olives.

  6. Bake the whole for 25 minutes. Let it cool down and enjoy it cold !
