Tuna Rice Cracker Salad
Looking into new ways to prepare and eat salads ? Here is one: use your salad as a topping for a low calorie, gluten-free rice cracker ! This is the Tuna Rice Cracker Salad, another vegan salad recipe that will bring you all the benefits of a wide array of greens (minerals, vitamins, fibers) with the fun of eating crunchy flavorful crackers. Perfect in all situations, be it on a picnic or as an appetizer.

The ingredients are given for 2 medium servings.
INGREDIENTS

1 cup of Kale

1/2 cup of Brussels sprouts

1/2 cup of purple cabbage

1/2 cup of finely chopped white onion

1 tin of Tuna in water

2 tbsp of Organic Vegenaise
-
6 Quaker Rice Cracker
-
Salt
-
Black pepper
-
1 Lime zest and juice
-
Hemp hearts

Chilli flakes
DIRECTIONS

Wash, dry and chop very thinly all the greens. We recommend either making a "chiffonade" using your knife or using a food processor and pulsing one or two times the greens mix. Note that you can find in supermarkets pre-made mix of such greens.

In a large bowl, combine the tuna with the finely chopped white onion, organic vegenaise (vegan mayonnaise), salt and black pepper to your taste, the lime zest and juice of 1 lime. Mix well to combine and flake the tuna.

Combine the thinly chopped vegetables with your tuna mixture.

Just before eating, assemble on a plain Quaker Rice Cracker (if left for long you risk it becoming soggy) and serve immediately.
