Tomato Tart
Imagine the flavors of tomatoes, herbs of the Provence and Dijon mustard swirling together. Add the crunchy texture of a healthy gluten free short crust pastry and there you have it. This is our Tomato Tart. Go for it !
The ingredients are given for 4 medium servings.
INGREDIENTS

1 9" circle of our gluten free salted short crust dough

6 ripe roma tomatoes (or better 4 ripe beef heart tomatoes)

3 tbsp of Dijon Mustard

Grated parmesan cheese

Herbs of Provence

Olive oil

Salt
-
Pepper
DIRECTIONS

Pre-heat the oven at 360 degrees Fahrenheit.

Spread your dough inside a circle baking pan. Center it and trim the excess.

Slice your tomatoes in 1/5" thick regular slices (use a mandoline slicer if you have any).

Spread on the top of the dough the Dijon Mustard. Sprinkle some grated parmesan in order to cover the whole dough with a thin cheese layer. Position your tomatoes on top in order to cover the whole dough with slices. Sprinkle herbs of the Provence, salt and pepper.

Bake in the oven for 30 minutes. Enjoy !
