Sweet Kale Salad
For a quick put together in a busy afternoon, in this salad we are utilizing leftover Quinoa and Roasted Chicken. Salads can be comforting if you go for a light creamy Caesar dressing.
Watch out for those calories and read those ingredients from store bought dressings. We are very picky when it comes to our salad dressing. We want simple fresh ingredients and tend to stay away from highly processed products. In this recipe we test out some store bought dressing that we fell in love with for those quick grab and go days.
INGREDIENTS

1 Cup Kale

1/2 Cup Brussels Sprouts

1/2 Cup Purple Cabbage

1/2 Cup Cooked Quinoa

1/2 Cup Cooked Roasted Chicken
Salad Dressing
This Caesar Salad dressing with ½ the Calories caught our attention and we just had to try it. We can say we are completely in love with this dressing. It is light and just the right creamy consistency.
DIRECTIONS

Wash and chop very thinly all vegetables. We recommend using a vegetable slicer.

In a large bowl, combine all ingredients together.

Pour dressing over salad, and toss to coat evenly all ingredients.

Refrigerate 10 to 15 minutes before serving. Enjoy!
