Stir-Fry Potato Noodles

Sometimes, your pantry is almost empty and you have to scratch your head as to what you can do with what you have in a quick and healthy manner. We had this scenario not so long ago and Cavita came up with a Stir-Fry Potato Noodles recipe that is fully vegan, very tasty and is a significant change to fried potatoes.

This recipe is best done on the spot than prepared in advance. Vegetables noodles can become soggy if cooked in advance and store in the fridge. We recommend eating it the same day. In less than 20 minutes all included you will have a delicious vegan main dish for 4 persons.

The ingredients are given for 4 medium servings.

 

INGREDIENTS

 

  • 4 medium potatoes

  • 1 chilli pepper

  • 1 cup of white onions, sliced

  • 3 cloves of garlic

  • 1 teaspoon of cumin seeds

  • Salt and black pepper

  • Coconut oil

DIRECTIONS

  • Start by washing and peeling the potatoes. Then using a spiralizer, create potato noodles from them. Put aside the potato noodles in a bowl filled with cold water in the fridge so that the potatoes do not start getting oxydized or developing bacteria.

  • Separately, peel and slice white onions. Peel and chop 3 cloves of garlic. Wash, trim the ends and chop one chilli pepper. If you want to have a little bit less heat, remove the seeds of the pepper before chopping it. You can also use a less hot chilli such as a pimiento pepper.

  • When you have finished preparing all your vegetables, drain your potato noodles and let them dry a bit on top of paper towels.

  • Heat a frying pan or a wok (always use a stainless steel or black steel or cast iron) at a high temperature (a drop of water drop on the pan's surface should levitate and slide). Once done, reduce the fire under the pan by half. Add enough coconut oil for your stir-fry (usually 1 to 2 tablespoons). Move to the stir-fry step before the oil starts smoking.

  • Now starts the stir-frying. First, add inside the pan the white onions while continuously stirring. Once the onions translucent, add the cumin seeds, the garlic and the chilli. Once the garlic starts getting golden, add the potato noodles. Stir-fry until the potato noodles starts softening. You shouldn't cook them for too long as they will start crumbling.

  • Once you have finished stir-frying, take out the pan's content inside a cold dish. Sprinkle with salt and black pepper to your taste. Serve and enjoy!
