Spicy Chorizo Salad

 

For Antoine, "salad" was a synonym of "bland". Cavita changed that and came up with this fiery salad recipe during their early days in France. The secret incredient (not so secret seeing as it is in the title) ? Chorizo is a spanish sausage usually made using port meat and the spanish pimentón, a hot type of paprika. If you are thinking like Antoine was, you have to give this one a try ! If you cannot find good quality chorizo, you can replace it by a hot pepperoni sausage. The taste will be different. Remember always look for quality ingredients. This recipe also uses feta dices usually sold in glass jar resting in a herbs and olive oil mix. If you cannot find it, just use plain feta, dice it and add some herbs of the Provence in the salad dressing.

 

This recipe is for 2 medium servings.

 

INGREDIENTS
 
  • 10cm of chorizo sausage sliced very thinly (1-2mm)

  • 20 feta dices infused with olive oil and herbs

  • 4 cups of lettuce leaves

  • 8 cherry tomatoes

 

Salad Dressing
  • 2 table spoons of apple cider vinegar

  • 6 table spoons of olive oil

  • 2 tea spoons of Dijon mustard

  • 1 tea spoon of paprika

  • Salt

  • Black pepper

 

 

 
DIRECTIONS

 

  1. Wash the lettuce and spin dry it or let the water drain in a strainer (this step is important to remove the water). Wash the cherry tomatoes and cut them in halves. Add the lettuce leaves, the sliced cherry tomatoes and the feta dices (after having drained the feta dices from the excess olive oil coming from their initial container) in a bowl.

  2. Cook the chorizo slices in a non-stick frying pan (without adding any fat). Let them caramelize on a medium to high fire to the point they start getting crispy. Remove from the pan and rest on a paper towel to drain the excess fat of the chorizo. This givesyour sald a crunchy texture and the heat brings the flavours alive in the chorizo. 

  3. Prepare your salad dressing by adding in a bowl the Dijon mustard and the apple cider vinegar. Using a whisk, incorporate the olive oil little by little so that you have an homogeneous and almost fluffy mix. Season to your tast with salt and pepper and add in the paprika to bring some more spanish sun to the recipe.

  4. Mix together in a bowl coating evenly your lettuce, cherry tomatoes with the salad dressing.

  5. Dress your salad by layers: plate content (lettuce and cherry tomatoes which you have coated with your salad dressing) first, sprinkle on the feta dices and the chorizo slices in between. And enjoy the heat !
