  1. Wash and drain the chickpeas. Ensure that it is completely dry before mixing the ingredients.

  2. Mix together your finely chopped cilantro, garlic, hot pepper, salt, black pepper and avocado oil (olive oil has a smoking point too low to be used for roasting).

  3. Spread thinly onto a baking sheet and bake at 400 degrees Fahrenheit for 45 mins. Ensure no chickpeas are over laping.

  4. You can bake for longer if you prefer the chickpeas to be more crunchy. Also feel free to alter the amount of cilantro and pepper to your taste. Once baked, let it cool down and put it in a jar. You can keep these for a few days outside or one week in the fridge. Enjoy

Spicy Channa

 

During his first stay in Trinidad & Tobago, Antoine always wondered what was the deal with these rows of plastic bottles filled with roasted chickpeas in the supermarket. Brave but not reckless, he waited for Cavita to make him discover this snacks enjoyed by many in the Caribbean Nation: Spicy Channa (channa is another name for chickpea in T&T). Made by frying chickpeas in a blend of spices and herbs but we are making a roasted version (no deep fry).

 

This spicy crunchy snack is also very healthy as it made for over 90% from chickpeas, a bean-rich with protein, dietary fiber, and folate. No wonder both adults and children enjoy this snack when they have the munchies!

 

The ingredients are given for two small mason jars of snacks.

  • 1 tin of chickpeas

  • 3 tbsp of finely chopped cilantro

  • 2-3 tbsp of finely chopped garlic

  • 1 tbsp of chili flakes or hot pepper

  • Salt

  • Black pepper

  • Avocado oil
