Summer in Nova Scotia can have some pretty hot days and during these days we should be careful as it can lead to dehydration in the body. A good nutritional meal can help greatly by providing all the intake you need to function while cooling you down. Cold soups are a great choice of meal on warm days and Lean Lifestyle wanted to share with you this awesome cold Poivrons Soup recipe. 

This recipe is for 2 medium servings.

 

INGREDIENTS
  • 4 sweet peppers of different colors, de-seeded

  • 1 onion, peeled and sliced

  • 10 garlic cloves

  • 1 tbsp of geera (ground roasted cumin)

  • 1/2 cup of coconut milk

  • Olive oil

  • Salt

  • Pepper

  • Cilantro

 
DIRECTIONS

 

  1. Pre-heat your oven at 350°F.

  2. Wash, de-seed and cut in 3 parts each of the sweet peppers. Peel and slice in big chunks the onion. Lay all the vegetables (garlic cloves with their skins (to avoid burning the cloves) also) on an oven tray covered in advance with foil paper (to facilitate the cleaning part). Sprinkle some olive oil, salt and pepper on top of the vegetables.

  3. Put the vegetables in the oven (in the middle position) for 30 minutes. Once finished, peel the roasted garlic cloves.

  4. Put the roasted vegetables in a blender with the coconut milk and the ground roasted cumin (geera). Blend until the mix is smooth. Taste it and adjust the levels of salt and pepper.

  5. Pour the soup in a container and let it rest at least four hours in the fridge so that it is cold enough when you will want to eat it.
