Oat Cakes

 

Oat Cakes are initially a type of crackers made from oats and invented in Scotland. When Scottish immigrants arrived in Nova Scotia, they shared and modified their recipe bringing birth to a whole new type of Oat Cakes. These Oat Cakes are halfway between the initial salty oat "crackers" and shortbread.

 

Soft, crunchy, rich, sweet & salty, these oat cakes make for a filling treat to eat on a busy morning with a cup of tea when looking for the comfort of a good biscuit. And you can let your imagination go wild with it! Organic Raw Cacao Nibs, Spices, Berries, Raisins... just add it in the recipe and discover infinite variations of this Canadian staple!

INGREDIENTS

  • 1 cup of all-purpose flour

  • 1 cup of all-wheat flour

  • 2 cups of rolled oats

  • 1 cup of coconut sugar

  • 2 tsp of baking powder

  • 1/2 tsp of salt

  • 1 cup of shortening

  • 1/2 cup of cold water

 
DIRECTIONS

 

  1. Add together and stir in a big bowl the 2 types of flour, the oats, the coconut or brown sugar, the baking powder and the salt. Continue until the mix is homogeneous.

  2. Add in the shortening and using your fingers rub it in so that you get homogeneous crumbles.

  3. Add the water in the bowl and mix it with a fork until a dough ball forms. Divide the dough bowl in half. Put each half on a parchment paper, the size of a baking tray.

  4. Using wax paper (that you put on top of the dough ball halves), roll the dough in a rectangle of around 1cm thickness. The thinner, the crunchier the oat cakes. The thicker, the softer the oat cakes.

  5. Put your two dough rectangles in two baking trays and cut each rectangle into 8 smaller rectangles. These cut lines will facilitate the work once the dough is baked.

  6. Bake in the oven at 350 degrees Fahrenheit for 2 minutes or until lightly browned. Using a long blade knife, separate the oat cakes by cutting the previously made cut lines. Cool down on top of a cooling tray or on top of paper towel. Store in an air-tight box.
