In the Caribbean, you can find these around every corner at your local bakery. These bites of heaven are made of a spicy filling inside a light crunchy pastry dough. Revisiting it the vegetarian way, we are sharing these Mini Veggie Pies that you can have either for breakfast or a quick snack. 

 

To the filling, we added a heap of Ginger (good for digestion, bone health and relieves joint pain etc), Pickled Peppers (rich in vitamin C, B6, and E) and a rich ground Soy (high Fiber, Protein, and Folate).

 

The result is a nutritious snack that will help you in getting the nutrients you need all over the day.

INGREDIENTS

  • 2 cups of minced vegan meat

  • 1/2 cup of chopped white onions

  • 1 thumb of grated ginger

  • 2 cloves of grated garlic

  • 1/4 of finely chopped pickled hot peppers

  • 1/2 cup of slices of cherry tomatoes

  • Tomato sauce

  • Salt

  • Black pepper

  • Green seasoning

  • Onion & Garlic Powders

  • Puff pastry dough

 
DIRECTIONS
 
  1. Peel and chop the onion. Peel and grate the ginger and the garlic. Chop the peppers. Slice the cherry tomatoes. 

  2. Once all your ingredients are ready, start up a pan on a medium heat (you can use coconut oil or water to saute the ingredients). Add in the onions first. Get them translucid. Then add the vegan meat and the hot peppers and cook them until the meat is cooked. At that point, add tomato sauce to your taste, the ginger, the garlic, the tomatoes, salt, pepper, green seasoning, onion powder & garlic powder. Adjust the flavors to your preference and slow cook it for at least 15 minutes. Use the tomato sauce to control the level of liquid inside your preparation as you will need the mix to be semi-dry so that it does not soak through the dough. Once you have something that you like, remove the pan from the stove and let the mix cool down.

  3. Preheat the oven to 410 degrees Fahrenheit. Using puff pastry dough (either bought as rolls or made), cut out 8 some small squares or shape of your choice. Spoon the filling on four of the circles. Cover them each with one of the remaining squares and seal the edges using your fork or spoon. If you want your pies to be golden, brush some milk (an alternative to egg yolk) on top.

  4. Bake the pies in the oven for 25 to 30 minutes until the dough has fully developed. Enjoy them straight from the oven. If eaten at a later time, re-heat them in an oven.
