Marinated Chickpea Salad

 

Mediterranean people knows the best how to live a good and healthy life under the sun. They priviledge cold meals made using their local products such as fragrant herbs, olive oil, lemons and sun vegetables and beans. This marinated chickpea salad is a direct heritage from our beloved mediterranean cuisine. The chickpeas will bring you the proteins and energy that you need in all circumstances while the tomatoes and the sweet peppers will lighten and moisten the whole dish. Add some lime for the refreshing acidity and some fragrance through the cilantro and the olive oil and you will obtain this wonderful dish, perfect for barbecues and picnics during summertime ! And the best ? The longer you keep it in your fridge, the more the the flavors will develop thanks to the lime and the olive oil !

 

This recipe is for 2 medium servings.

 

 

INGREDIENTS
 
  • 1 tin of chickpeas, drained and rinsed

  • 1 yellow sweet/bell pepper, cubed

  • 12 cherry tomatoes, sliced

  • 1/2 cup of cilantro, chopped

  • 2 garlic cloves, finely chopped

  • 1 lime, juiced

  • Salt

  • Black pepper

  • 1 tbsp of Olive oil

  • Feta Cheese (crumbles to sprinkle on top)

  • Chives, chopped

DIRECTIONS

 

  1. Drain and rinse your tin of chickpeas.

  2. Chop in small cubes the yellow bell/sweet pepper and slice the cherry tomatoes in half.

  3. Add all the vegetables to the chickpeas in a large bowl.

  4. Finely chop the cilantro and garlic and add to the vegetables.

  5. Mix together the juice of one lime and all of it's zest, salt to your taste, black pepper and the olive oil.

  6. Toss together coating everything with the lime juice and olive oil.

  7. Serve in a plate and sprinkle some feta crumbles and chopped chives on top. Enjoy !
