Lucky Peas Soup

 

At Lean Lifestyle, we have you covered for any kind of day. This recipe is for the New Year's Day, when you are looking to build up some luck for the rest of the year.

 

Dating back to the American Civil War, black-eyed peas are believed to truly be lucky peas as during the war, the Confederates left intact black-eyed peas crops believing it to be slaves food. The untouched black-eyed peas allowed many to survive the harshness of that war providing food to the greater number. Since that time, it has become a tradition to eat black-eyed peas for New Year's Day along with collard greens (the green color is a symbol of money and wealth) as this combination is bound to bring you luck for the whole year. Cavita, growing up with this tradition in Trinidad, shared her mom's recipe with Antoine and now a tradition is being kept and carried out every new years day!

 

Tradition aside, rest assured. We made sure to prepare for you a recipe that will bring you more than luck: health! Enjoy it without moderation and be sure to tell us how you liked it. This soup can be made with or without meat, in fact growing up as a child Cavita never ate pork or beef based on her parents religions hence most of the traditional childhood meals would either be vegetarian or contain chicken.

 

This recipe is for 4 medium servings.

 

INGREDIENTS
 
  • 2 cups of collard greens, with stems and veins removed

  • 1/2 cup of sliced celery

  • 1 cup of diced tomatoes

  • 1 cup of white onion, chopped

  • 1 cup of dry black-eyed peas soaked over night or 1 tin drained and rinsed

  • 3-4 cups of water (depending on the amount of broth you want)

  • 2 Magi vegi stock cubes

  • Salt

  • Black pepper

  • 1 tbsp of olive oil (if you are not using the salami)

 

 

 

 

 
DIRECTIONS

 

  1. Wash and chop the collard greens into small bite size pieces. Peel and chop 1 white onion.  Wash and chop the tomatoes. Wash and slice 1/2 a celery stick. Drain and rinse the content of 1 tin of black-eyed pea.

  2. In a medium saucepan heat 1 tablespoon of olive oil and add the chopped white onion. Stir until the onion softened and fragrant. 

  3. Add the water and your vegetable stock cubes, and bring to a boil.

  4. Stir in the collard greens, the black-eyed peas, the chopped celery, the diced tomatoes, salt, and black pepper to your taste. Partially cover and reduce heat to simmer until kale is tender, for about 10-15 minutes. 

  5. Pour into a bowl and enjoy this light warm soup.
