Sometimes, we all need a treat. Be it to indulge in some chocolate cake or some ice cream, it is important to balance your everyday staples with little nutshells of pleasure to keep a happy and cheerful mind. However, a  treat does not have to mean unhealthy!

 

Our Fruit & Nut Oat Muffins are proof that you can eat a flourless, gluten-free, refined sugar-free, added fat-free (no butter or oils) muffin that will fulfill your sweet craving. These muffins will bring you all the goodness contained in oats (vitamin B1, iron, dietary fibers) while bringing you some well-deserved energy from the bananas & the organic maple syrup.

 

We encourage you to customize this recipe and use the fruits you are most in love with. Prepare the muffin base and insert in it these spices (vanilla, cinnamon, nutmeg...) or others you may prefer. For frozen fruits, we find that berries, pomegranate, pineapple, goes well. The nuts add energy and a nice crunch to the texture we like using walnuts, cashew nuts, peanuts, pistachios... but you can experiment and see which combinations your family likes. In this version, we tried it with frozen blueberries, strawberries & pomegranate and used chopped walnuts and it tasted awesome!

 

 

*** The ingredients are given for 12 muffins ***

 

INGREDIENTS

  • 2 ½ cups of rolled organic oats

  • 1 cup of plain yogurt

  • 2 eggs

  • â…“ cup of maple syrup

  • 1½ teaspoons of baking powder

  • ½ teaspoon of baking soda

  • 2 ripe bananas

  • Frozen fruits

  • Chopped nuts

 

 

 
DIRECTIONS
 
  1. Measure all the ingredients you will need for this recipe (oats, yogurt, maple syrup, baking powder & baking soda).

  2. Put in a blender, in this order: the yogurt, the maple syrup, the eggs (white & yolk), the baking powder & soda, the oats and the bananas. Blend until you get a smooth and homogeneous mix.

  3. In a muffin tray, using muffin paper cases, pour the muffin mix. Add in each some frozen fruits and chopped nuts.

  4. Put it to bake in a pre-heated oven at 400°F for 17 minutes or until a toothpick comes out dry when inserted into the muffin.
