Falafel Buddha Bowl

 

Buddha Bowl... this name has always sounded mystic and adventurous for us. Tied to the Buddhist religious practices, it also refers to set of bowls used by the monks including those used to collect food from donors. Culinary, a Buddha Bowl is a collection of ingredients, preferably vegan and raw, assembled together inside a bowl to create a delicious and scrumptious salad. Now, Lean Lifestyle is giving you a recipe for one of these bowls: The Falafel Buddha Bowl!

 

 When building a recipe for a Buddha Bowl, you have one main goal: making it nutritious. In our bowl, you will a significant amount of proteins through the beans, the corn, the tofu and the falafel to regenerate and build your body. Fibers are bountiful to ensure a good digestion and iron is in high quantity for a healthy heart. This dish is indeed a full breakfast or lunch that will fill you during your active day.

INGREDIENTS
 
  • 2 tbsp of cooked sticky rice

  • 2 tbsp of black beans

  • 2 tbsp of corn

  • 2 tbsp of tofu

  • 1 tbsp of white onions

  • 3 head of mushrooms

  • 3 falafel balls

  • 2 leaves of boston lettuce

  • 1/3 wedge of lime 

  • 2 tsp of Tahini

  • 2 tbsp of Tamari (to marinate tofu)

  • 2 tbsp of chilli garlic paste (to marinate tofu)

  • Water

 
PREPARATION

 

  1. Marinate the tofu in tamari and chilli garlic paste.

  2. Chop the mushrooms and white onions into slices and prepare the lettuce into strips.

  3. On a baking sheet assemble the mushrooms, white onions, marinated tofu and falafel balls (keep each ingredient separated).

  4. Drizzle olive oil and salt over the mushrooms and olives, broil for 10 minutes.

  5. Rinse and drain a tin of corn.

  6. Boil sticky rice according to package directions.

  7. Cook black beans or rinse and drain a tin of black beans ( we recommend cooking dry beans).

  8. Assemble your Buddha Bowl with 2 tablespoons of basmati rice in the centre, on the side 2 tbsp of black beans, 2 tbsp of corn, 2 tbsp of cooked marinated tofu, 3 roasted mushrooms sliced, 2 leaves of boston lettuce chopped in strips, 1 tbsp of roasted white onion, 3 falafel balls chopped in half and a small wedge of lime.

  9. For the dressing, mix well 2 teaspoons of tahini with water until you have a running dressing paste. Drizzle over the bowl and enjoy the whole fresh.
