With Fall around the corner, it's the time to be careful of the flu and keep covered as temperatures start to drop significantly from one day to the other. It's the perfect time to switch to warm comfort foods in order to give your body the weapons to push back flu as they start spreading. Lean Lifestyle creates this Simple Split Pea Soup that is both light and nourishing. 

 

This recipe is for 4 medium servings.

 

INGREDIENTS
 

Soup ingredients

  • 1 cup of diced onions

  • 2 chopped chilli peppers (Optional)

  • 3 cloves of garlic, chopped

  • 1 tbsp of ginger, chopped

  • 2 tbsp of cumin seeds

  • 1 cup of orange split peas

  • 2 cup of sliced broccolini

  • 1 cup of diced potatoes

  • 2 corncobs sliced in 8 chunks

  • 1 tbsp of Maggi vegetable stock

  •  Water

  • 2 tbsp of coconut oil

 

 
DIRECTIONS

 

  1. In a large stockpot, place your split peas and potatoes in water (ensure the water is covering the contents) and bring to a boil. I use the orange split peas in this recipe as it cooks faster than the yellow split peas.

  2. To your pot add the Maggi vegetable stock, the ginger, salt and black pepper to your taste.

  3. Cook until vegetables are tender. Then blend using an immersion blender to make a smooth soup.  

  4. At this point, you can add the corn cobs and sliced broccolini (a smaller version of broccoli) and switch to very low heat while you prepare the next step.

  5. In a small saucepan, heat 2-3 tbsp. of coconut oil and add the cumin seeds.

  6. Stir the cumin seeds and add the onions, garlic and chili pepper. Cook until fragrant. You want a slightly charred color but not burnt.

  7. Add the mixture of the cumin seeds, onions, garlic and chili peppers to the soup pot and stir.

  8. Serve hot and enjoy the warm creamy flavor of this vegan/vegetarian soup.
