Crispy Broccoli Bites

 

Broccolis are materials for awesome finger food. The bushy part, when roasted, become crispy and caramelized. The stem brings the moisture and the broccoli flavor. For those trying to lose weight, Broccoli is your friend! It's one of those vegetables that's filling, adds bulk to your meals, carries a good source of dietary fiber along with omega-3 fatty acids and other vitamin properties. Broccoli also has cancer fighting and immune boosting properties!

 

This recipe is perfect for an appetizer or as an afternoon snack. It is vegan, healthy and packed with flavors and may convert some of your guests into adding more broccoli to their diet! Eat as a snack or add to them other roasted vegetables to make it a meal.

INGREDIENTS
 
​Crispy Broccoli Bites
  • 1 head of Broccoli

  • 1 Tablespoon of garlic powder

  • 1 Tablespoon of onion powder

  • 1 Tablespoon of chili flakes

  • 2-3 Tablespoons of Olive Oil

  • 1/2 Teaspoon of salt 

  • 1/2 Teaspoon of black pepper

  • 1 cup sliced white onions

  • 5-6 cloves of garlic

 

Curry Mayo Sauce

  • 1 Teaspoon of curry powder

  • 2 Tablespoons of Vegan Mayo

  • 2 Tablespoons of hot water

  • 1/2 Teaspoon of lemon juice

  • A pinch of chili flakes

 
DIRECTIONS
 

Making the Crispy Broccoli

  1. Wash, dry and cut into smaller branches your head of broccoli. The smaller the branches, the crunchier the result.

  2. In a big bowl, combine all the spices and seasonings with the olive oil until you obtain a homogeneous paste.

  3. Add in the broccoli and toss it around until all the small broccoli branches are completely coated with the seasoning.

  4. Peel and slice the onion. Take the garlic cloves and leave the skin on.

  5. On a baking tray, lay some parchment paper. Add the coated broccoli, spacing each branch as much as possible between each other.

  6. On another baking tray, add the parchment paper, the onion slices and the garlic cloves.

  7. Put everything in a pre-heated oven at 400°F for 30 minutes. After 20 minutes of roasting, toss the broccoli around so that all the broccoli faces are exposed to the oven hot air. At this occasion, take out the baking tray with the onion slices and garlic cloves as these should be roasted, and peel the garlic cloves.  It's ready to enjoy with your Curry Mayo sauce.

Making the Curry Mayo Sauce

  1. In a small bowl combine one (1) teaspoon of curry powder with 2 teaspoons of hot water to make a thick paste.

  2. Add the Vegan Mayonnaise to the curry paste and mix well.

  3. Combine half (1/2) teaspoon of lemon juice and mix until smooth.

  4. Top with Chili flakes for extra heat.
